As fishing season approaches, do you have some fish in your freezer that has been there a while? Would you like to convert it to something delicious? Or do you just want to delight your friends and family with delicious prepared salmon?
This class will cover brining, drying, and hot smoking kippered salmon (with two different brine options) and the making and serving of gravlax.
Please note: students do not need to bring their own fish. They will leave with the information and skills to prepare kippered salmon and/or gravlax at home.
